Banana Bars with Butter-Rum Frosting

Not so long ago I realised that one cake staple has never been made in my kitchen: banana bread! So I decided to try out two variations. First I shared Joy the Baker’s brown butter banana bread. This week I’m going to share with you banana bars with rum butter frosting from Better Homes and Gardens.

At first I found the frosting on this a bit two sweet, but after you’ve had a few bars it grows on you! These bars would be just as delicious without the frosting: they’re light and moist and tasty.

Banana Bars with Butter-Rum Frosting


    Banana Bread
  • 113g Butter, softened
  • 1 1/3 cups Sugar
  • 1 ½ tsp Baking powder
  • ½ tsp Bicarbonate of soda
  • ¼ tsp Salt
  • 1 Egg
  • 1 cup Bananas, mashed (about 3 medium)
  • ½ cup Sour cream
  • 1 tsp Vanilla essence
  • 2 cups Flour
  • 100g Almonds, chopped
  • Rum Butter Frosting
  • 43g Butter, softened
  • 3 cups Icing sugar
  • 1 tbsp Rum
  • 1 tsp Vanilla essence
  • ½ cup Milk


    For the Banana Bread
  • Preheat the oven to 180C. Butter a 30cm x 23 cm baking dish.
  • In a large bowl, beat the butter for 30 seconds on medium speed.
  • Add the sugar, baking powder, bicarb and salt. Mix until combined.
  • Beat in the eggs, bananas and sour cream.
  • Beat in as much of the flour as possible with the electric mixer. Add the rest by hand. Be careful not to over mix the batter.
  • Stir in the almonds.
  • Pour the batter into the prepared baking tin and spread as evenly as possible.
  • Bake at 180C for 25 minutes or until a skewer inserted in the centre comes out clean.
  • Allow to cool in the pan on a wire rack.
  • For the Butter-Rum Frosting
  • Beat the butter in a medium mixing bowl for 30 seconds.
  • Slowly add in the icing sugar, scraping down the sides of the bowl as you go along.
  • Beat in the rum and vanilla.
  • Add milk bit-by-bit until the frosting reaches spreading consistency.
  • Spread over the cooled banana bread.
