{Christmas Baking Extravaganza} Gingerbread Chocolate Chip Cookies

I have one last post to get you into the Christmas spirit; if this doesn’t do it then I don’t know what will! Cookies are perfect for having guests over, road trips, evenings on the couch with tea or anything really! They’re also the perfect end to the Christmas Baking Extravaganza 🙂

{Christmas Baking Extravaganza} Gingerbread Chocolate Chip Cookies

Ingredients

  • 142g Unsalted butter
  • 1/2 cup Sugar
  • 1/2 cup Light brown sugar
  • 6 tbsp Molasses
  • 1 1/2 tsp Vanilla extract
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 3/4 tsp Ginger
  • 3/4 tsp Baking powder
  • 1/2 tsp Bicarbonate of soda (baking soda)
  • 2 cups Flour
  • 1 cup Chocolate chips

Instructions

  • Cream together the butter and sugars in a large bowl.
  • Turn the mixer to low and slowly add in the molasses and vanilla, followed by the dry ingredients.
  • Increase the speed until the dough comes together and is smooth.
  • Stir in the chocolate chips by hand.
  • Cover the dough and refrigerate for a few hours.
  • Preheat the oven the oven to 180C (350F) and line a baking try with baking paper.
  • Create balls of dough about 1 - 2 tbsp in size.
  • Space the balls about 4 cm apart and flatten them slightly with the heel of your hand.
  • Bake for 10 minutes, allowing to cool on the baking sheet for a few minutes before moving to the wire rack to cool completely.
